Week 13...

Intro to Cakes:
Coconut cake, raspberry filling, Italian meringue butter cream, and marzipan for decoration
Bakeshop Production:
Oreo layer cake w. whipped cream

Petite Fours:
Chocolate mouse in a tuile cup with a orange and chocolate shavings
Prickly pear sorbet
Nut tuiles with chocolate edges
Spanish bread pudding with creme anglaise
Triple mousse squares w. a sponge cake layer and printed chocolate garnish
Pecan diamonds
Chocolate hazelnut roll w. chocolate butterfly garnish
Passion fruit and salted carmel bon bons
(the 1st plate was not plated by me)
